It's Football time with Frito-Lay Giveaway!

Lots of things start in the fall. School starts back, the weather gets crisper and of course Football season starts. I enjoy watching football. It is really exciting to see who is going to win. I am naturally a Colts fan. So when they play it is always an exciting game. Some people tailgate incase you don’t know what tailgating is. It is where you hang out with other fans in the parking lot before the game. I remember tailgating in high school before my schools team played. It was a lot of fun. Of course not everyone can make it out to the game so, we watch from home or get together with friends and family to watch. What fun is a football game without food? I love to eat. Eating during a football game is like eating popcorn while you are watching a movie.

I received an awesome better for you tailgating kit from Frito-Lay. It had Lays potato chips, Fritos, and Tostitos chips. I also received a really nice ceramic football that has two bowls for chips and dip. The last thing was a $25 dollar American Express Gift card to purchase the ingredients with. I really like the football dish. It has goal post stands. It really looks like a football. My son saw it and started saying football and he wanted to play with it.

There are much healthier options than the normal pizza and hot wings to eat during the game. Frito-Lay is really concerned with the health of their customers. Remember with some moderation and substituting items for low fat or fat free can make a big difference by cutting hundreds of calories. A little creativity and thought and you can come up with healthier options for your party guests without sacrificing flavor and quality. So Frito-Lay is promoting a healthier tailgate party.

One Frito-Lay Product I love is the canned Jalapeño cheddar cheese. It is great on chips or as a special ingredient in a recipe. I have two recipes that I use it in. If I don’t have the Jalapeño cheddar cheese I don’t make the recipe. One of my favorite recipes is for taco bake. It can be served as a meal during the games. It would be a great half time meal. I would love to share my taco bake recipe with you.

Sheilacakes Spicy Taco Bake

1 pound ground beef (or turkey would work too)
1 package taco seasoning
1 can Fritos Jalapeño Cheddar Cheese
4 to 5 tortillas (I use the medium size)
A handful of cheddar or Mexican blend cheese

Pre-heat the oven to 400 degrees

Brown the meat and drain. Return to skillet and add taco seasoning and water per the packages directions. Heat through. Add three big spoonfuls of the Jalapeño Cheddar Cheese to the meat and stir.

Using a glass pie pan put one tortilla on the bottom and add one spoon of Jalapeño Cheddar Cheese and coat the tortilla. Add some of the meat and repeat until you only have enough meat to do it one more time. Don’t forget to coat each tortilla each time. When you get to the last layer put more Jalapeño Cheddar on the top. Sprinkle a little shredded cheese on the top and bake for 15 minutes.

Not only is it good but it is easy and inexpensive! If you wanted you could double the quantities and make it in a bigger pan.

Another Football favorite at my house is Fritos with ground beef and Jalapeño Cheddar Cheese. Of course if you don’t like your cheese spicy they also sell a Mild Cheddar which is also really good. It is delish on Cool Ranch Doritos. I thought I would share how I first learned about the Fritos canned cheese. My cousin Susie had me try it. I remember when I went and visited her when she was in college and we decided to have a picnic at the park. We also went canoeing and we got stuck. We had pitas and chips and the cheese. I am hooked. It’s something that not a lot of people know about but man it is good!

  1. Its not your typical dip for chips but here is a recipe to use with either Fritos The ORIGINAL or SCOOPS corn chips!

    2 cooked potatoes, diced
    2 cooked carrots, diced
    1/2 lb cooked green beans, diced or 1 cup cooked peas
    1/2 green pepper, diced
    1/2 red pepper, diced
    1/2 celery, diced
    1 tbsp chopped chives
    1/2 cup mayonnaise
    3 tbsp chili sauce
    salt and pepper
    lemon juice to taste

    Mix all the diced vegetables with chives together in a large bowl. Mix mayonnaise with chili sauce, lemon juice, salt and pepper. Pour over mixed vegetables, mix well. Serve either cold or room temperature. The kids love it and dont realize it good for them.

  2. Here is a simple dip that is great with frito lay corn chips.
    1 Vidalia onion
    1 can diced tomatoes
    1 Jalapeno pepper
    Put all in food processor and chop til desired consistancy.

  3. At our house, we love to take a block of fat free cream cheese and pour over it a healthy amount of salsa. We leave it just like that, but you can mix it all together. Dip in with your fave FritoLay chips (hubby loves Fritos, I prefer baked Tostitos Scoops). It's also good with veggies.

  4. Traveling Nachos (a throwback to my grade-school days!):
    1 bag Fritos
    1/2 cup cooked, seasoned ground beef
    1 tbsp. salsa
    1 tsp. sour cream
    1 tbsp. shredded cheese

    Open the bag of Fritos. Toss all the ingredients in. Hold the top together and shake. Eat with a spoon. Delish!

  5. Frito / Salsa Dip-
    Need one jar of mild, medium or hot salsa
    one large bag of fritos
    3 different types of your favorite cheese. You must shred and I suggest at least one yellow and one white type.
    2 limes cut into small pieces for garish
    Assemble
    Place bowl of sala in the middle
    Next distribute fritos on plate around sala
    Layer wih different cheeses and top with lime pieces.

  6. I like no cook meal. Here is the super easy and healthy one that we always have.
    Lay's Chips Tofu Salad:
    Ingredients-
    Lettuce
    Lay's chips
    Tofu
    Tomatoes
    (Parsley if preferred)
    Dressing-
    Seaweed Wasabi Mayo (Seaweed powder, Wasabi, Mayo mixed together)
    Healthy, delicious and low calories!

  7. Zesty Frito Chicken Corn Salad
    2 cups diced cooked chicken
    2 cans Mexicorn, drained
    2 green onions, sliced thin
    1 cup shredded cheese
    1/3 cup ranch salad dressing
    5 tablespoons mayonnaise
    1 cup crushed Fritos

    Combine all ingredients except Fritos. Chill. Add Fritos and stir just before serving.You can use more or less salad dressing and mayo to your taste. You can use low fat mayo, low fat cheese, or low fat ranch dressing to make it healthier - also depends upon your taste preferance.

  8. One thing my kids (ans hubby) love to eat with the Scoop Tostitos is this. It's yummy and easy.

    1lb hamburger meat
    1- can refried beans
    1- pack of taco seasoning
    1- can campbell's fiesta cheese soup


    Brown 1lb hamburger meat. Drain meat. Add taco seasoning pack and follow directions on the pack. Then add i can refried beans and 1 can Campbell's Fiesta Cheese soup. After heated, it's ready to serve! You can serve on top of chips or scoop out of bowl. We also top with tomatos, shredded cheese, picante and lettuce!


    You can also use this recipe on top of tostada shells!

  9. This was my supper more often than I care to admit during college!

    Spread one (or more, depending on size of your dish) package of fat-free Philadelphia cream cheese on the bottom of your dish. Make sure the entire dish is covered.

    Add one can of chili (meatless for vegetarian recipe, or with turkey for lower-fat) directly over cream cheese.

    Sprinkle a package of Mexican blended cheese on top. (Use whole package!)

    Microwave until cheese is fully melted. Sprinkle with crushed Fritos if desired.

    Serve with Fritos! YUM!

  10. Love this recipe when im in the mood for something different:

    1 can hormel tamales (cut into 1 inch chunks)

    1 can chili (no beans)

    1 can refried beans

    1 package shredded cheddar cheese

    1 small white onion (diced)

    !/2 a bag of Fritos

    Take a deep baking dish and layer ingredients 3 times over. Top with remaining cheddar cheese, cover and bake in a 325 degree oven for 45 minutes. ENJOY !!

  12. Frito Pie

    You can use a ready made pie crust for this. Mix crushed Fritos, ground beef, grated cheese, black olives, onions. Fill the pie crust. Put more crushed Fritos on top. Bake until cheese is melted. Serve with sour cream and guacamole.

  13. Taco Salad
    1 bag chili Fritos
    1 can kidney beans
    1 bag salad lettuce
    1 pound taco meat
    ranch dressing
    shredded cheese
    olives

    Put all items in a large bowl, fold to mix and serve. It is an easy salad with great flavor and crunch! perfect for eating will watching the Colts win :)

  15. FRITO CASSEROLE

    2 lbs. hamburger, browned and drained.
    1 package frozen Mexican corn
    1 7 oz can tomato sauce
    1 bag of Fritos crushed
    shredded American cheese, as much as you like.

    Add Mexican corn, tomato sauce to browned hamburger. Mix and pour in a casserole or other shallow dish. Cover with crushed Fritos then add cheese all over the top completely covering the Fritos. Bake at 350 degrees for 15 or until hamburger mix is bubbling.

  16. My submission is quite simple: prepare a green bean casserole and top with Fritos original corn chips in place of french fried onions. The first time I served this I was surprised with compliments. :)

  17. Easy Black Bean Dip
    •1 15-ounce can black beans, drained and rinsed
    •1/2 cup of your favorite Tostito's Salsa
    •1/4 cup plain fat free Greek-style yogurt
    •1/4 tsp cumin
    •2 stalks chopped fresh green onion

    Prep:
    Place drained black beans and salsa in a blender and puree until smooth. Spoon dip into a bowl. Stir in yogurt, cumin and onion.

    Use different types of salsa and spices to create your own version. Sometimes I put it into a pie plate, top it with cheese and put it under the broiler until the cheese melts.

    Serve with Tostito's Scoops

  18. I make "Walking Tacos". Get the single-serving bags of Doritos (any flavor) and crush them in the bag. Brown ground beef and season with taco seasoning and add that to the bag. Top with cheese, lettuce, tomato, and sour cream and eat right out of the bag!

  19. One of my husband's favorites is this simple and easy frito pie.
    I layer fritos, shredded cheddar, chili, onions, and repeat as many layers as you want. Bake at 350 for 20-25 minutes.

  20. I can't take credit for this one but it is SO DELICIOUS that I had to share!

    (serving size: 1/2 cup - 90 calories, 3g fat, 440mg sodium, 9g carbs, <1g fiber, 6g protein = 2 points)

    Recipe created by Ginny Barber & 3-A-Day of Dairy
    Serves 5

    Ingredients:
    1 teaspoon Chipotle pepper sauce
    2 (8-ounce) containers low-fat plain yogurt
    1/2 cup thick and chunky Tostitos salsa
    2 tablespoons cilantro, chopped
    1/4 cup low fat cheddar cheese

    Directions:
    Combine all ingredients in medium bowl; mix until blended and refrigerate. Add shredded cheese.

    Serve with assorted cut vegetables or Tostitos chips.

    I really love this recipe because it keeps me away from the cheesy beany dips that I LOVE but certainly don't love my hips and thighs lol

  21. I love to make nachos with out all that cheese sauce.

    What you will need is the following.
    Lettuce
    Tomatoes
    Avacodos
    Green onion
    Yellow onion
    Shredded cheese (any kind)
    Cooked Ground Meat (I like to use chickn, however any type will do)
    Favorite type of frito lay chip

    You make a layer of chips on a plate.
    Next you will add the ground meat and then cheese. Then microwave or bake until the cheese melts. Take it out and load it up with all the vegetables that you like. You can all more of what you like or leave out what you dont like.

  22. Years ago I had a friend give me a recipe for a very yummy, yet extremely healthy dip. It's basically non/low fat and full of fiber. It's also insanely easy to make and oh so tasty!!

    Mix:
    1 can of whole kernel corn drained
    1 can of black beans drained and rinsed
    I jar of salsa

    Mix and serve with frito chips or frito scoops.

  23. One of my favorite tailgating recipes is Texas Caviar. It's so quick and easy, since it's no-cook and made up of mostly prepared ingredients. You can always use fresh instead of canned, but good-quality, organic canned ingredients are just as good!

    1 can (15 oz) black beans, drained
    1 can (15 oz) black-eyed peas, drained
    1 can (15 oz) pinto beans, drained
    1 can (15 oz) yellow or white corn, drained
    1 can (4 oz) green chilies, drained
    1 jalapeno, seeded and finely chopped
    1 green pepper, seeded and finely chopped
    1 red onion, finely chopped
    2 cloves garlic, minced
    1/3 cup chopped fresh cilantro
    1/3 cup good olive oil
    1/3 cup vinegar of preference (I use rice vinegar)
    2 tablespoons white sugar (or more, depending on sweetness of vinegar)

    Mix the beans, corn, chilies, peppers, onion, garlic, and cilantro together in a large bowl. Whisk olive oil, vinegar, and sugar together in a separate bowl. Pour oil and vinegar mixture over other ingredients and toss. Cover and refrigerate at least 2 hours, over night is best. Make sure you serve with Fritos or Tostitos Scoops, it's a chunky dip!

  24. Corn Chips ROund we go Pie
    1 pound lean ground beef
    2 (10.75-ounce) cans low fat condensed cream of mushroom soup
    1 (12-ounce) can low fat evaporated milk
    1 cup (8 ounces) enchilada sauce
    1 packet dry onion soup mix
    1 (16-ounce) package Frito Lay corn chips
    1 cup shredded low fat cheddar cheese

    1. Preheat oven to 325
    2. In a large skillet brown ground beef; drain. Add mushroom soup, evaporated milk, enchilada sauce and the dry onion soup mix; stir well.
    3. Spoon about half into a 13 x 9 x 2-inch baking dish followed with half of the corn chips. Repeat the layers then top with the cheddar cheese.
    4. Bake for about 30 minutes, or until hot.

  25. Tostitos Salad

    Layer on a nine inch plate per person:
    Heap of mixed salad greens,
    slices of cucumber, red pepper, green pepper, a handful of cherry tomatoes,
    4 oz of sliced grilled chicken seasoned with Adobo and cumin, and a few slices of avocado.

    Dress with equal mix of low fat ranch dressing and your favorite barbeque sauce (about 1 - 1 1/2 tablespoon of each per serving)

    For crunch and the finishing touch,
    crumble tostitos scoops on top.

  26. Chicken And Frito Casserole Recipe
    1 can of cream of chicken soup
    1 small jar of Cheez Whiz
    1 large can of cooked chicken (it's easier than cooking a whole chicken!)
    salt and pepper to taste
    1/2 can of milk (use the soup can)
    2 tablespoons dried onion ( or you can use fresh)
    1 1 lb. bag of fritos (or similar type of corn chips)
    1 pepper, can be jalepeno or serrano type (optional, good if you like spicy food) chopped

    Heat oven to 350°F.

    In food processor or blender, chop about 3/4 of the bag of Fritos (this is the crust and topping so save some for the topping). Put about half of the chopped Fritos in the bottom of a 2 quart casserole dish that has been sprayed with non-stick spray and save the rest). Blend the soup, Cheez Whiz, onion, hot pepper, salt and black pepper until smooth. Add the chicken (drain if using the canned type). Blend. Pour into casserole dish and top with remaining Fritos. Bake for 30-35 minutes at 350°F.

  27. Cheetos Chicken

    3 cups crunchy Cheetos cheese-flavored snacks (or any other Brand)
    1/3 cup parmesan cheese, grated
    1/4 cup flour
    1/2 teaspoon salt
    1 egg
    1 tablespoon water
    2 boneless skinless chicken breasts

    1. Place the Cheetos in your food processor and process into small crumbs. Add the Parmesan Cheese and pour onto a plate.
    2. Coat chicken breasts in flour & salt.
    3. Combine egg & water. Beat until well combined. Dip floured Chicken in egg mixture.
    4. Coat the chicken in the Cheesie crumbs.
    5. Place on a lightly greased baking sheet (I use cooking spray).
    6. Bake for 35-45 minutes at 350° until chicken is cooked through (cooking time will depend on thickness of meat).

  28. I Never knew it was good 4 u Dip-
    1 can heinz vegetarian baked beans
    1 can mild rotel
    3/4 cup shredded cheddar cheese
    1 bag frito lay scoops

    microwave the baked beans and rotel together in one bowl until hot. sprinkle cheese just on top and microwave again until cheese melts. Stir gently just until blended.

    1 can sweet yellow corn, drained
    1 can black beans, drained
    1 can tomatoes (any style), drained
    2 avocados, diced
    1/2 red / purple onion, diced
    1 tsp. lime juice

    Combine ingredients, dip in with Frito Lay Tostito Scoops and enjoy your veggies!
