Caramel Apple Upside Down Cake Featuring Pazazz Apples

Our family loves apples. They are Noah’s favorite fruit. He has been eating apples for many years. He loves apple slices, applesauce and dried apples. When he was younger, he would eat apple slices with Parmesan cheese. He used to make roll ups with tortillas, cheese, and apple slices. We recently learned about Pazazz Apples.

Pazazz has perfect blend of sweet and tart. It’s an apple that’s perfect for celebrating special moments in a day. Noah will often have an apple for a snack after school. We use that time to talk about the day. He tells me what he did at school. I share with him what I did during the day. I am always thrilled when he chooses a health snack. Pazazz Apples are great on the go. Especially when you are out running errands.

Pazazz Apples are descended from the Honeycrisp but with a unique flavor and amazing crunch. I love that they are Grown sustainably by family orchards across the US. As a mom, that’s really important to me. I received some Pazazz Apples in the mail. Let me just take a moment to talk about the way they were packaged. They were each nestled in their own foam hole. They arrived in perfect condition. They are so delicious. As you know, I love to bake, so I was really excited to make a recipe featuring Pazazz Apples. There are so many great apple recipes. I really had a hard time deciding which one to make. I decided to make a recipe for Caramel Apple Upside Down Cake. I love upside down cake. Noah isn’t a big fan of pineapple, so I don’t make it as much as I like. I know he loves apples, so I thought I would give this a shot.

Here’s the recipe:

Caramel Pazazz Apple Upside Down Cake

Cake ingredients
1 1/3 cups flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup granulated sugar
1 stick of butter softened
2 eggs
1/2 teaspoon vanilla
1/4 cup milk

Caramel Topping
1/4 cup butter
2/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
2 Pazazz apples, peeled, cut into 1/2-inch wedges

Spray bottom and sides of 8- or 9-inch square pan with cooking spray. Preheat the oven to 325 degrees.
In a small saucepan, melt 1/4 cup butter over medium heat, stirring occasionally. Stir in brown sugar. Heat to boiling; remove from heat.

Stir in 1/2 teaspoon cinnamon. Pour into pan; spread evenly. Arrange Pazazz apple wedges over brown sugar mixture, overlapping tightly and making 2 layers if necessary.
In medium bowl, mix flour, baking powder, 1/2 teaspoon cinnamon and the salt; set aside.

In large bowl, beat 1 cup sugar and 1/2 cup butter with electric mixer on medium, until fluffy. Beat in eggs, one at a time, until smooth. Add vanilla. Gradually beat in flour mixture alternately with milk, beating after each addition until smooth. Spread batter over Pazazz apple wedges in brown sugar mixture.
Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool on cooling rack 15 minutes.

Run knife around sides of pan to loosen cake. Place heatproof serving plate upside down over pan; turn plate and pan over. Remove pan. Store cake loosely covered. Enjoy with a scoop of vanilla ice cream or whipped cream.

Keep an eye out for Pazazz Apples at your grocery store. You can always request that your store carry them by speaking to your store manager. You can find them in Indianapolis at Kroger and Meijer stores.
